The coffee cherry usually develops with two separate symmetrical oblong beans. This makes the beans flat on one side and rounded on the other. But sometimes the two beans don’t separate and you get only one bean within the cherry, which is rounded all over. This is a peaberry and is highly valued for its aroma.
